Free from all constraints, this unique wine is the result of the magic and surprises of nature, but also of the daring and creativity of the cellar master at Château de Bousval.

L’Enfant Sauvage is a 100% botrytised Chardonnay.
This noble rot is extremely rare and depends on precise weather conditions.
The cellar master decided to work the grapes from this plot in an original way to create a genuine wine. He decided to age the wine for 9 months in marc barrels. He chose these barrels for their oxygen content during the ageing process and for the aromatic contribution of the marc that had previously matured in them. The botrytised Chardonnay develops a very different bouquet, with more mature aromas of white peach, dried fruit and ripe pear. The marc brings aromas of mirabelle plums, sultanas and roasted almonds, which harmonise and blend with the aromas of the Chardonnay.

When the Chardonnay is aged in grappa barrels, it’s like a chabadabada.
This wine is atypical because of the rare presence of noble rot and the unconventional ageing in marc barrels, which gives it a disorientating touch.

Suggestion: Recommended with roast foie gras, salmon gravlax, chocolate pear, galette des rois or any almond dessert.
